A sweet home-made strawberry jam
– Fresh strawberries
– Liquor: whisky, cognac, rum, wine/red wine… Choose one.
Dice the strawberries very small and place them in a saucepan. Put it in high heat and stir until you see the strawberries’ juice. Add the liquor, ½ kg of strawberries half a liquor glass. Keep the high heat until the alcohol is evaporated. How to know it, use your smell: when it doesn’t smell of alcohol, it has been gone… After that, lower the heat to medium-low and add sugar. For ½ kg of strawberries, 3 or 4 sugar soup spoons or to taste if you are very sweet-tooth!! Reduce to taste, that is: if you like the strawberries almost melted, then cook it a lot; if not, just a little. Remember to stir from while to while. Served cold.
Tips: – If you use wine, you should add more sugar. But… if you don’t want to, use the jam for starters
with paté, cheese… or as a great sauce in roasts.
– If it’s summer, freeze it and serve as a wonderful ice-cream with anything you like.
