TOMATO & CHEESE SNACKS

Here you are another super easy recipe to prepare any day during the year.
             Ingredients:
                   – 2 tomatos, sliced
                   – Cheese, any kind, sliced
                   – Olive oil
                   – Salt
                   – Spices
Cut as many tomatos as you want, depending on how many people you are, in slices and place them in a plate. Add the olive oil, salt and spices, we recommend you to use basil, parsley or oregano. Then put the slices of cheese on the tomato, you can cut the cheese as you like but not too thick.

TIPS: You can add the olive oil and spices over the cheese, all depends on your taste and which kind of             cheese you are using.
       – You can also use tofu.

SERRANO HAM SNACKS

Serrano ham can be eaten in any way: in a sandwich, toast… but here, we present you the way to have really nice snacks for any moment. You’ll see the recipe is really easy.
             Ingredients:
                   – A loaf of bread
                   – Serrano ham
                   – Olive oil
                   – Salt
                   – Tomato (optional)
                   – Parsley
Cut the loaf of bread in slices and toast them. Place them in a plate, pour some olive oil and add salt to taste. You can, either, cut the tomato in slices and add them to the toasts or give the toasts a rub with it, so they will have the tomato taste. Sprinkle the parsley over the toasts and add the ham on.

TIPS: Instead of ham, you can also use sardines.

PRAWNS WITH GARLIC

If you want to surprise your guests or family any day with a spectacular appetizer, dare to cook this prawns with garlic! It is easier than it seems.
             Ingredients:
                   – 250 gr prawns
                   – 3 laminated cloves of garlic
                   – Salt
                   – Parsley
                   – Chili pepper
                   – Half glass or less white wine
                   – A glass olive oil
Put the oil in a pot, when it’s hot add the garlic and chili pepper. Once the garlic is gold (take care it doesn’t get burnt), add the prawns and the white wine, be careful when adding them because the oil can be too hot and spitting. Season with salt to taste and in few minutes the prawns will be cooked.
Serve them in a bowl or a small soup plate, or one made of ceramics will be much more beautiful, dust the dish with some parsley to give more taste.

TIPS: – If you buy the prawns in a fish market or boiled, peel them before cooking; if you are going to            use frozen prawns just add them to the pot.
       – If you don’t have parsey, use coriander or chives.
       – We recommend you to use dry chili pepper instead of powdered.

TOMATO SAUCE

Here you are a 100% natural tomato sauce prepared to your taste.
             Ingredients:
                   – Tomato (2 or 3, depends on how big they are)
                   – Spices: coriander, parsley, oregano… if they are fresh, mcuh better.
                   – Salt
                   – Olive oil
Put all ingredientes in the blender glass and when all it’s well blended, the sauce is ready.

HOME-MADE PIZZA

This is the best pizza ever!!! The most difficult thing to prepare is the dough but once you get it, you can create your very own pizza with your favourite ingredients.
             Dough ingredients:
                   – 300 gr. flour
                   – Half glass of warm water (it’s important to be warm)
                   – 2 olive oil soup spoons
                   – 2 full coffee spoons of baker’s yeast (much better to buy it at the baker’s)
                   – Salt
                   – Spices (oregano, garlic, parsley, basil… any!)
Put all ingredients in a bowl and mix them with your hands until the dough is consistent, no lumps. Add more flour or water if you need it. After that, spread flour over the countertop and place there the dough. Knead it for at least 15 minutes or until the dough is flexible and soft. Leave it in another bowl for 30-45 minutes covered with a humid cloth to let it rise.
After that long half an hour, spread some more flour over the countertop and stretch the dough with a rolling pin or your hands.
Preheat the oven at 200º.
             Pizza ingredients (picture):
                   – Tomato sauce
                   – Onion (if you like it)
                   – 1 or 2 tomatoes
                   – Spices (oregano, parsley or basil)
                   – Cheese
                   – Serrano ham
                   – Bacon
                   – Or any other ingredient you like
Spread the tomato sauce all over the stretched dough, add some spices if your dough doesn’t have any. Then, put the onion and tomatoes’ slices, cheese, ham and bacon. Leave in the oven for 10-15 minutes or more (all depend on your oven).

RIBS

Cooking ribs is quite easy and fast, I love them!
             Ingredients:
                   – Ribs (take into account how many will eat them)
                   – Olive oil
                   – Rosemary
                   – Thyme
                   – Salt
Grease the ribs well with olive oil and then dust the spices and salt all over.  Put them in an oven tray and let them cook in the oven for at least thirty minutes or more until they look really crunchy.

TIPS: – If you have the possibility to ccok them on a barbacue, they will be much better.
        – When they are almost brown, you can pour some barbacue sauce dissolved in soya over them.

GUACAMOLE, TUNA FILLETS & MUSTARD

Tapas can be prepared with any ingredient, any savour… you want to. Try to be as imaginative as possible to get a tasteful and innovative dish each time. The most you try, the best your dishes will be.
In this tapa, we mix 3 ingredients: guacamole, tuna and mustard. A strange combination with a spectacular result.
             Ingredients:
                   – Toast bread, 1 slice per person
                   – Guacamole
                   – Tuna fish
                   – Mustard
We have to marinate the tuna fillets with some olive oil, salt, pepper (optional), rosemary and thyme, at least 2 hours beforehand. Grill the fillets.
Toast the bread and spread guacamole over them, then place the tuna fillets along-cut and add the mustard. That’s all!!

TIPS: – If the mustard has a honey touch, it’s much better.
        – You can also use avocados instead of guacamole.
        – Parsley is also suitable instead of rosemary and thyme.
        – If you don’t find tuna fillets, try to use swordfish.

SPICY CLAMS OR WITH TOMATO SAUCE

This is not an easy dish, however I want to share it with you as it is an excellent starter. It takes you a lot more time to cook it but we all deserve such a delicacy.
        Ingredients (4 people):
             – 2 kg of clams
             – Half glass of water
             – 1 bay leaf
             – 2 minced onions
             – 2 minced garlic cloves
             – 2 soup spoons of flour
             – 1 glass of white wine (not sweet)
             – (Minced) Parsley
             – Salt
             – Olive oil
1.- Clean the clams with cold water, place them in a big bowl with water and cooking salt. Keep them so for 4-8 hours and change the water if there’s much sand in it. That’s normal and means the clams are fresh and alive.
2.- Boil the half glass of water, then add the bay leaf and the clams. If you’re boiling the water in high heat, put it down a little. After 3-5 minutes, the clams will be opened by the steam, place them on a plate, because if we leave the clams in the boiled water, they will keep on cooking and we don’t want it. Don’t throw the water away.
3.- Take a pan to cook the sauté with the onion, garlic, olive oil and salt. (At this point, you can add the cayenne). Afterwards, add the flour and stir well to not allow it to stick. (At this point, you can add the tomato sauce and paprika). When the previous mixture is thick (looks like a béchamel), add the wine and put the heat high to let the alcohol evaporate, then down the heat to medium and add the water we have kept before. Put the heat up again to boil everything, down the heat and let the flavours get mixed well.
4.- When the sauce is ready, add the clams and put a lid on. Let it cook for few minutes so that the clams get the great flavour of our sauce.

TIPS: You can also add some tomato sauce (if it’s home-made, much better), cayenne pepper to give a spice taste and parika. I added the right moment to add each ingredient in the explanation.

SALMOREJO, MEDALLIONS & QUAIL EGGS

Here you are a great tapa to be served as a starter or main course. It’s very chic and original to surprise everyone at home. The incovenients are: we should prepare the meat some hours before and the eggs have to be cooked at the moment.
            Ingredients:
                     – Toast bread, 1 slice per person
                     – Salmorejo
                     –  Pork medallions
                     – Quail eggs
                     – Barbacue sauce or similar (HP, Jack Daniel’s…)
First of all, we have to season the meat with olive oil, salt, pepper, rosemary and thyme (try to do it at least 2 hours before cooking) and then, we will grill it at the guest’s taste. Sometimes, it’s  better to sear the meat and afterwards, when preparing the tapa, cooking it.
Toast some bread slices and spread salmorejo all over them. Then place the medallions, 2 are enough per tapa, it depends on how big they are. Instead of frying the eggs, griddle them. After all this, pour a little barbacue sauce over tha tapa.

TIPS:  – If you don’t have any salmorejo prepared, you can rub some tomatoes on the bread.
         – There’s no need to use any barbacue, HP sauce… but that smoked taste will give the tapa a                 special touch.

MAYONNAISE

A home-made mayo will always taste better and be healthier than buying it at the supermarket, but do you know it only needs 3 ingredients to be done?? So easy, so fast, so great!!
                  Ingredients:
                                – Half glass (or 2/3) olive oil
                                – One egg
                                – Salt (to taste)
Put everything in a blender beaker and blend it until the mixture is thick enough. Try not to move the blender up in order not to get the mayonnaise curdled. And ready to be used!!

TIPS:   – add some drops of lemon juice to avoid rusting and keep it better and for longer.
          – do you like garlic mayo?? Just add a garlic clove and blend everything well.
          – when served, sprinkle some parsley over and give your mayo other look.
