Today it is very easy to buy any product from any part of the world. The noodles are a great idea to eat some pasta adding different ingredients apart from the typical tomato sauce.
                   – Noodles (quantity depending on how many people you are)
                   – 250 gr prawns, for two people; they can be fresh, boiled or frozen
                   – 2 peppers: red and green
                   – Half onion
                   – 1 lime juice
                   – 2 spoons of oyster sauce (optional)
                   – 2 spoons of soya sauce
                   – 2 spoons of tomato sauce (optional)
                   – Half glass of white wine (optional)
                   – Salt
                   – Olive oil
                   – Cayenne pepper or sauce
                   – Pepper
                   – Coriander, parsley or both, chopped
First, we have to stir-fry all vegetables, mid-heat, after 5 minutes or when the vegs are soft add the sauces, the lime juice, the wine and all the spices, except the coriander and the parsley.
If the prawns are fresh or boiled, add them to the stir-fry and cook them for some minutes, to taste. Normally, the prawns are cooked in very few minutes.
We can cook the noodles while cooking the prawns, as they are ready in 5 – 6 minutes. But you should always have a look at the packet to know how much time they have to be cooked or cook them to your taste. After be boiled, add them to the stir-fry so they can get all the different flavours, this is optional.
Finally, serve in a soup plate and spread the coriander or parsley over.

TIPS: In this recipe there are many ingredients, but some are optional because you don’t have them or don’t like them. You can add a spicy touch if you fancy this kind of food, but it’s not needed. And although you see a lot of things, it’s a dish it won’t take you a lot to prepare.

This is not an easy dish, however I want to share it with you as it is an excellent starter. It takes you a lot more time to cook it but we all deserve such a delicacy.
        Ingredients (4 people):
             – 2 kg of clams
             – Half glass of water
             – 1 bay leaf
             – 2 minced onions
             – 2 minced garlic cloves
             – 2 soup spoons of flour
             – 1 glass of white wine (not sweet)
             – (Minced) Parsley
             – Salt
             – Olive oil
1.- Clean the clams with cold water, place them in a big bowl with water and cooking salt. Keep them so for 4-8 hours and change the water if there’s much sand in it. That’s normal and means the clams are fresh and alive.
2.- Boil the half glass of water, then add the bay leaf and the clams. If you’re boiling the water in high heat, put it down a little. After 3-5 minutes, the clams will be opened by the steam, place them on a plate, because if we leave the clams in the boiled water, they will keep on cooking and we don’t want it. Don’t throw the water away.
3.- Take a pan to cook the sauté with the onion, garlic, olive oil and salt. (At this point, you can add the cayenne). Afterwards, add the flour and stir well to not allow it to stick. (At this point, you can add the tomato sauce and paprika). When the previous mixture is thick (looks like a béchamel), add the wine and put the heat high to let the alcohol evaporate, then down the heat to medium and add the water we have kept before. Put the heat up again to boil everything, down the heat and let the flavours get mixed well.
4.- When the sauce is ready, add the clams and put a lid on. Let it cook for few minutes so that the clams get the great flavour of our sauce.

TIPS: You can also add some tomato sauce (if it’s home-made, much better), cayenne pepper to give a spice taste and parika. I added the right moment to add each ingredient in the explanation.

Salads are great and sometimes we can add many different ingredients to get a tasty and colourful one. They are very easy to prepare, and here you are the easiest one.
This salad has only 2 main ingredients plus the dressing, so you won’t spend much time peeling and adding a lot of things.
                              – Tomatoes (2 are ok, but it always depends on how big they are and how many
                                 you are)
                              – Onion
                              – Olive oil
                              – Salt
                              – Spice (Recommended basil, but oregano or parsley are also fine)
You can peel the tomates if you are used to, add onion to taste (if you don’t like it too much, just add a little). Be generous with the olive oil, add salt and the spice or spices you like most.
The result is an easy, very tasty and fresh salad for those hot days in summer in which you don’t feel like cooking anything. It can be a great starter to share or a side dish for any course.

The best is that, at the end, you will have the tomato’s juice mixed with the olive oil and basil, so you can dunk some bread and enjoy it a lot more!!

Sometimes guacamole tubs are not as natural as they should be, so here you are the way to prepare your very own home-made guacamole, all ingredients are easy to be found in any supermarket.
                              – 2 ripe avocados (medium size)
                              – 1 peeled and diced tomato
                              – Half onion, chopped
                              – Salt (to taste)
                              – Pepper (to taste)
                              – Half lemon juice
                              – Chop fresh coriander (to taste)
Put all ingredients in a bowl, mash and mix them with a fork. You can also use a blender, just add all ingredients without been chopped.

         – A perfect dip for nachos, chips, fries…
         – Instead of lemon, you can use lime or balsamic vinegar.
